so, it’s not always a metter of assuming the card is the average card in the deck. Even though 8 is close to the statistical average of a deck of cards, you want to find what card is most likely. You want to look for mode, not mean. The mode of the deck is of course 10. Even though the deck averages to 8, the chance of the card actually being an eight is far lower than the chance of it being a ten.

Discounting aces, the total value of the cards in a blackjack deck is 4x(2+3+4+5+6+7+8+9+10+J+Q+K) = 336. Divide that by 48 cards, and you have ’7.0’ Depending on how you count aces, the resulting average could be between 6.5 and 7.3. I don’t see where ’8’ came from, but ’10’ seems rather cautious.
